Cinnamon Topped Blueberry Muffins
A twist with cinnamon in a blueberry muffin
Ingredients: 1/2 cup butter softened 1 cup sugar or (sucanat opt) 2 eggs beaten 1/2 c milk or (Blue Diamond Almond Breeze opt) 2 cups flour or (whole wheat pastry flour opt) 2 tsp baking powder 1/2 tsp salt 1 tsp ground cinnamon 1/4 tsp ground nutmeg 2 cups fresh blueberries or (frozen) 2 T sugar or (sucanat opt) for topping
Directions: Cream together the following in mixing bowl: Butter and sucanat or sugar, add eggs and continue to mix well Stir inthe milk add dry ingredients to the mixture. Stir ingredients. Fold in blueberries.
Fill muffin tins with muffin cup liners. Add mixture to the muffin liner cups. Fill about 2/3 full. Sprinkle tops with small amounts of sucanat or sugar (optional)
Bake in preheated oven 375 degrees for about 20 minutes or until done.
