A quick and easy blueberry pie
Ingredients:
1 can (2 cups) blueberries in syrup
1 can (8 to 9 oz) crushed pineapple in syrup
1 package (8 oz) cream cheese room temp.
3 T sucanat or sugar
1 T milk or (Blue Diamond Almond Breeze opt)
1 baked pastry shell, 9 inch
1/4 cup sucanat or sugar
1/4 tsp salt
2 T arrowroot
1 tsp lemon juice (fresh)
1/2 cup whipping cream, whipped
Directions:
Drain blueberries and pineapple reserving syrup in a bowl and set aside.
In another bowl:
Blend the cream cheese with 3 T sucanat or sugar,1 T milk, and vanilla. Stir pineapple into the cream cheese mixture. Spread the pineapple cream cheese mixture over the bottom of the prepared pie shell. Chill.
In a saucepan, sdtir 1/4 cup sucanat, or sugar salt and arrowroot. Add the reserved syrups 1-1/3 cups. Stir into the arrowroot mixture. Cook stirring until thickened. Stir in blueberries and lemon juices. Cool. Pour over the chilled cream cheese layer. Chill. Top the pie with whipped cream.
